The 141 Restaurant @ The Bellingham Hotel in Wigan opened in December 2009. The hotel itself has been a fixture in Wigan for the last 30 years but this new contemporary modern British restaurant has brought a new vibe to the business. The aim is to put the restaurant on the foodie map and Head Chef Stephen Monks has liaised with international Masterchef and author Tom Bridge to create the menu. Signature dishes include Ham hock terrine and Slow roasted shank of Lancashire lamb. The dining room has a real contemporary air but retains its Victorian features and the whole operation has been an eco-refurbishment, creating one of the greenest dining rooms in the north west. The wine list focuses on the namesake Bellingham vineyard in South Africa. The hotel has 33 bedrooms, three separate function room and a pub/bar which is open to the public. The restaurant itself is open from Tuesday to Saturday from 5pm-9pm and on Sundays from noon until 8pm with a carvery menu only.

The Alpine Restaurant at Denshaw enjoys a prime location overlooking Saddleworth moors and is a popular destination for walkers. A former pub, the Alpine Restaurant has had an extension added and now seats 60 in a dining space that combines old school charm with modern furnishings. Mains range from a Chef's roast of the day to Mushroom and herb stroganoff served with rice. Kingfisher Restaurant has an amazing location on Sandside, Milnthorpe on the banks of the Kent estuary. The views of Morecambe Bay and Grange-over-Sands are spectacular and the owners have redesigned the layout and structure of the restaurant to make the most of the vistas. What was a dated and gloomy seventies-style building has now had a quarter of a million pound revamp making it contemporary, bright and colourful with a floor-to-ceiling glass frontage. As the proprietors point out, the purples, greens, mauves and slate of the interior bring the outside in. Disabled diners are extremely well catered for too with a ramp, lift and toilets. The food is traditional British with a twist - for example, a starter of breast of wood pigeon is served with sweet potato rosti and a main of fresh fillet of seabass comes with Morecambe Bay shrimps. Having spent 18 years working in different restaurants around the Bolton area, chef-patron Nick Cullen fulfilled a dream by opening his own restaurant, Nicks, in 2000. The restaurant won the Bolton Evening News Restaurant Of The Year award in 2004 and has an extremely loyal and regular client base. Unprepossessing from the outside, the warm and intimate former terraced house has bags of character and you feel as if you could literally be eating anywhere in the world. The food is paramount here, as you'd expect from a chef-patron who's passionate about his cooking. The cuisine is best described as English and Continental, decidedly not Modern British, and with more of an old-school appeal to it. Dishes like Chicken Chasseur and Tournedos Rossini feature - a rarity these days. The wine list is the best in Bolton, according to Nick, and keep your eyes peeled for the regular guest wines. It's on the site of what was Italian restaurant Amici and Pipers has retained many of the building's charms, namely the stone walls, exposed beams and the cottagey feel while adding soothing creams and browns and soft leather. The Plough At Eaves is the oldest pub in the Fylde with a whitewashed main building that dates back to 1645. It was the site of a Civil War battle (Cuddy) and the pub - which used to be called the Plough At Cuddy Hill -- is everything you would expect from a hostelry with history: beamed ceilings, flagstones, brasses on the walls, toby jugs behind the bar. Landlord and head chef Mike Dawson has built up the Plough's reputation for traditional home-cooked food and with a restaurant, piano lounge and conservatory there is space for 200 diners inside as well as al fresco dining and a children's play area outside. The Plough is a popular spot for walkers, cyclists and the soft-top set and the Lancaster Canal is close by. Not the easiest pub to find but well worth the effort.

Set in a 16th-century farmhouse belonging to Little Carrside Farm, Rigby's has been serving up traditional British food (much of it sourced from the family farm) since 1988. It's the sort of restaurant that does the simple things well - roast leg of lamb with mint sauce, roast beef with Yorkshire pudding, roast pork with apple sauce. Rigby's is proud to be traditional and you see that both in the food and the décor. Much of the homely farmhouse feel has been retained in the conversion and the bar area, with its brasses on the walls and oak beams, is a welcoming foretaste of the fine farmhouse food to come. The dining area, spread over several rooms, boasts splendid rural views. The wine list is thoughtfully put together and very reasonably priced. It's hidden away deep in the Fylde countryside between Wrea Green and Warton but is well worth a visit.

The Travellers Rest pub in Euxton is aptly named as it's situated between Chorley and Southport. It dates back to 1750 and was originally three weaver's cottages which were knocked into one. The award of a Michelin Bib Gourmand in January 2007 was the latest accolade for The Waggon At Birtle on Bury and Rochdale Old Road. Chef proprietor David Watson came from a Michelin-starred background (ex-Pool Court in Leeds) and returned to his roots to open the Waggon with wife Lorraine in 2002. Housed in a former pub, the premises were completely refurbished to create a smart 50-cover bistro with a 25-cover function room above. The food is Modern British with a slight French influence but relies heavily on fresh local produce; hence dishes like the Tempura of Chadwick's Bury black pudding with Lancashire cheese, apple and bacon and mustard vinaigrette. The White Bull at Ribchester has been a fixture of this picturesque Lancashire village since 1707. A former coaching inn, it's named after the indigenous white bulls that were bred here in the Ribble Valley by local monks. The outside of the pub is one of the most attractive in Lancashire with a portico built using genuine Roman pillars that were dredged out of the River Ribble. This picturesque pub is attached to the six-storey Grade II-listed Clifton windmill at Salwick which dates back to the late eighteenth century. Newly refurbished, the Windmill Tavern reopened in early 2009 after a refurbishment and Head Chef Danny Brannan has produced a menu focused on traditional fare sourced from local suppliers. As well as the a la carte choice, there are chalkboarded seasonal specialities, deli boards and a traditional Sunday carvery. The Windmill has an extensive wine list and a good choice of cask ales and speciality beers. There is also a new landscaped beer garden.

Dating back to 1782, Ye Horns Inn at Goosnargh is a lovely atmospheric old pub with original beams, open fire, five dining rooms spread over two floors, six ensuite bedroons and a unique bar behind which you can eat. It's a very traditional British menu here with hearty roasts, pies and game to the fore. Roast Goosnargh duckling, slow roasted and served crisp with apple sauce, is the signature dish. The Woods family have been at the helm here for 50 years with Mark continuing the family tradition. Beacon Fell country park is close by.
