Is there a way I can make a cake that does not contain any eggs or nuts? One of my friends is allergic to these? - Roisin Dromey

Here's a gorgeous recipe for a cake without eggs and nuts.

Chocolate Truffle Cake
Ingredients:
75 grams water
75 grams liquid glucose
75 grams sugar
2.5 gelatine leaves
475 grams best quality dark chocolate (70% cocoa)
500 mls double cream (well chilled)

Method:
Soak the gelatine leaves in cold water for a few minutes until soft.
Bring the water to the boil with the sugar and glucose.
Break the chocolate into pieces and add to the pan. Remove from the heat and stir gently until the chocolate has melted and is well mixed in.
Lightly whip the cream to dropping consistency and fold into the mixture using a metal spoon.
Pour into a 26cm ring and leave in the fridge to set for at least 3 hours.
Remove from the ring by running a hot knife around the inner edge.

If you would like to add a base to the cake try this:
Ingredients:
25 grams rice crispies or cornflakes
65 grams melted white chocolate
45 grams nutella

Method:
Mix all the ingredients together and spread out into the base of the cake ring. Chill in the fridge to set while making the truffle mixture.
