Ynyshir Hall, Eglwysfach
Ynyshir Hall is a charming house close to the River Dyfi with a history going back at least to the 1500s and possibly even earlier. The list of eminent previous owners includes Queen Victoria, who was responsible for the glorious woodwork. Now it's Wales' only Relais & Chateaux hotel and part of the von Essen Collection. Each room is composed like a work of art, and filled with antique furniture, rugs and pottery. The bar is cosy and welcoming in shades of peach and terracotta, with sofas of deep blue damask. The picture window, framing a rock garden makes a memorable backdrop to this charming room. The dining room is duck egg blue, which provides a perfect foil to the pictures of local landscapes gracing every wall. Crisp white linen, silver and crystal set the scene for a memorable dining experience.
There is a wealth of superb, fresh local ingredients available locally. Cardigan Bay teems with succulent seafood with lobsters, crabs and shrimp landed at Aberystwyth and Borth. There is wild salmon in the local rivers, venison and wild game are in abundance, the pork is all organic, the bacon is all hand cut for breakfast, sausages are all made by the local butcher to Ynyshir's own recipes. The free-range chicken and the beef are second to none, Welsh farmhouse cheese is the finest anywhere, and, of course, there is tender-sweet Welsh Mountain Lamb. The restaurant's large kitchen garden produces plenty of herbs, asparagus, salads, soft fruit and baby veg. Joan, the General Manager, collects samphire and other wild foods, including wood sorrel and wild garlic.
