The award of a Michelin Bib Gourmand in January 2007 was the latest accolade for The Waggon At Birtle on Bury and Rochdale Old Road. Chef proprietor David Watson came from a Michelin-starred background (ex-Pool Court in Leeds) and returned to his roots to open the Waggon with wife Lorraine in 2002. Housed in a former pub, the premises were completely refurbished to create a smart 50-cover bistro with a 25-cover function room above. The food is Modern British with a slight French influence but relies heavily on fresh local produce; hence dishes like the Tempura of Chadwick's Bury black pudding with Lancashire cheese, apple and bacon and mustard vinaigrette. The main a la carte menu (7 startes, 7 mains, 7 desserts) changes every three months whilst the good-value Market Menu is updated every fortnight.
