About Dalhousie Castle Hotel & Aqueous Spa

Dalousie Castle, located just south of Edinburgh, is a 13th century fortress set within acres of wooded parkland on the picturesque banks of the river Esk. The Castle, now a luxury hotel retreat, was once the family home of the 1st Earl of Dalhousie and in keeping with its heritage the castle continues to run the royal sports of archery and falconry. Facilities here include the Aqueous Spa, the ‘secret bar' next to the open fire and award winning dining in the ancient barrel vaulted dungeon restaurant. A real retreat, the hotel provides peace and tranquillity, combined with international standards of contemporary comfort and personal service. The dining operation here is driven by Head Chef, Francois Giraud, who is drawing on his international culinary experience to introduce modern European menus that complement the very best of Scottish flavours. A strong advocate of local suppliers and seasonal ingredients, sourcing the finest Salmon, Venison, Grouse and prime Scottish Beef for the two restaurants; the informal Orangery with its sweeping views over the river Esk or the more formal, 2 AA Rosette Dungeon restaurant where you can expect starters such as Lobster & Pistachio Tortellini with shellfish soup & salsify and mains of roast Partridge with a sauce & puree Soubise creamed haricots blancs & pickled Girolles.
