After working in France and Belgium, Marc Vérité realised a lifelong ambition and opened his eponymous Bistrot Vérité in Birkdale Village. It is very much a family affair with wife Michaela running front-of-house and dad Claude helping out with patisserie. It’s deliberately modelled on a rustic French bistro with simple and laid-back styling and a daily-changing blackboard menu based firmly upon fresh local produce. Starters might include Mussels Mariniere or Baked camembert with caramelised apples and pistachio nuts; typical mains include classic dishes such as Chateaubriand for two with Bearnaise sauce and Grilled venison haunch steak rubbed with juniper berries and garlic. Jali

Jali is a first for Blackpool in that it's a fine dining Indian restaurant. The sumptuously decorated venue blends traditional and contemporary design elements and as a centrepiece has an ancient well that was uncovered during renovations. The menu, although Indian, is a far cry from your typical curry house fare. A sister restaurant in Hastings had an AA rosette, something which this award winning Blackpool restaurant has now also achieved. Jali has a fantastic private dining room that can seat 16 people, offers a takeaway service and there is also a new Signature Dishes menu available Monday to Saturday. Mulberry Tree

The Mulberry Tree at Wrightington is one of the northwest’s most acclaimed pub-restaurants holding two AA rosettes. It opened in 2000 with head chef and co-owner Mark Prescott returning to his Lancashire roots after a glittering culinary career with the Roux brothers that took in seven years at the Waterside Inn at Bray and nine years at London’s legendary Le Gavroche, latterly as head chef. The building dates back to 1832 and over the years has been a wheelwright’s, a brewery, a blacksmith’s and a pub. The Mulberry Tree is open for lunch and dinner seven days a week with a choice of classic a la carte in the dining room or a more informal menu served in the bar. The Traddock Austwick

Located in Yorkshire Dales National Park, ideally positioned at the Three Peaks of Whernside, Pen-Y-Ghent and Ingleborough. The Traddock is steeped in history, originally built in the 1740s as a family home, the Georgian building was extended in the Victorian era and had endured several changes of use until recently becoming the hotel and restaurant of today. Passionatley run by the Reynolds family, the name derives from the trading paddock that was once on the grounds and was nick-named 'The Traddock' by local farmers. The hotel has 12 individually styled, en-suite rooms that retain their original features and character. The award winning restaurant is an integral part of the hotel's ethos of best practise and sustainability, which extends to the policy of local sourcing and mimimal carbon footprint. They use organic and bio-dynamic produce where possible. The kitchen team of four is headed by Chef John Pratt whose passion has led him to partner many local artisan producers to create dishes inspired by traditional English slow cooking. Dinner is served daily from 6.30-9pm and offers starters such as Smoked Haddock and Spinach Pikelets, Soft Poached Egg and mains of Pan Roasted Rack of Mansergh Hall Lamb, Rosemary Polenta Cake, Honey Roasted Parsnips, Rosemary and Redcurrant Jus. or slow food such as Confit Shin of Mansergh Hall Beef-Shallot Tatin, Turnip and Horseradish Puree, Dauphinoise and Red Wine Jus. Southport’s former Warehouse Brasserie has unveiled a cool new look -- the restaurant, now known as The Warehouse Kitchen & Bar, is co-owned by Paul Adams and Steven Gerrard. The uber-cool Kitchen & Bar features a white cloth restaurant on the ground floor and ultra-chic bar with cool tunes on the first. The Warehouse has been a fantastic success for the last fourteen years and in that time received many accolades – listed in all major food guides including the Michelin Guide, the AA Good Food Guide & Hardens, along with being voted as one of the 50 best restaurants in the country by the Independent and receiving two AA Rosettes and a Michelin Bib Gourmand. The bespoke design-led restaurant boasts an extensive a la carte menu along with a wine list to complement. During the day you can enjoy food from the a la carte or a great value set lunch menu and a similar set menu is available to early diners. The a la carte offers starters such as smoked haddock fettuccini with tarragon and bacon crisp or Southport chowder with brown shrimps, razor clams and mussels. Mains include steaks, lobster and crayfish salad and the Warehouse burger. The menu also features a choice from the East with starters of chilli salt squid and Vietnamese noodle soup with flaked chicken chilli and coriander and mains of Indonesian monkfish curry and chocolate, chilli-glazed pork belly with mango, papaya and pineapple salad.
