Unprepossessing from the outside, the warm and intimate former terraced house has bags of character and you feel as if you could literally be eating anywhere in the world. The food is paramount here, as you’d expect from a chef-patron who’s passionate about his cooking. The cuisine is best described as English and Continental, decidedly not Modern British, and with more of an old-school appeal to it. Dishes like Chicken Chasseur and Tournedos Rossini feature – a rarity these days. The wine list is the best in Bolton, according to Nick, and keep your eyes peeled for the regular guest wines. Nicks is closed Monday and Tuesday and does a great Sunday lunch. Booking essential at weekends.

The multi-award-winning restaurant Ramsons has been a fixture in Ramsbottom since 1985. It's one of the north of England's most acclaimed destination restaurants and is 'Reader's Restaurant of the Year' in the 2009 Good Food Guide. Ramsons covers two floors and has recently undergone an impressive Milanese-inspired refurbishment with the main restaurant at ground level and the Hideaway bar below. But it's not just the decor that is Italian-influenced; the food and wine draw heavily on the proprietor's Italian sourcing connections. Ramsons has been using organic produce since 1987, long before its current popularity. Vegetarians are well catered for with their own gourmet tasting menu. The wine list is exclusively Italian and meticulously put together through years of vineyard trips and research. All the wines are also available to purchase. Don't expect a cheap meal at Ramsons and do be prepared for the host's eccentric and entertaining style. Awards | Good Food Guide 6

Inside, a recent refurbishment has given the décor a traditional homely feel with is open fires and mahogany bar yet brought it up to date with contemporary touches. The main bar area is busy and has a cracking atmosphere, especially when live bands play and a separate restaurant area offers dining for 28 people. The food is a mix of traditional pub classics and modern British cuisine, all made fresh to order using as much locally sourced produce as possible. Head chef Carl Parkinson and his team are passionate about the region's dishes and produce specials which showcase the area's specialities. Expect a choice of lighter bites and gourmet sandwiches, all the classics done well; beer battered fish and hand cut chips or skinny fries, homemade burgers, pies, curries and Lancashire Hot Pot. A separate Steak menu offers locally reared beef hung for 28days for full flavour. Desserts are all homemade and the kids menu features more healthy, home cooked versions of their favourites. Regular themed nights are also a feature and you can catch all the major sporting events on large screens.

The award of a Michelin Bib Gourmand in January 2007 was the latest accolade for The Waggon At Birtle on Bury and Rochdale Old Road. Chef proprietor David Watson came from a Michelin-starred background (ex-Pool Court in Leeds) and returned to his roots to open the Waggon with wife Lorraine in 2002. Housed in a former pub, the premises were completely refurbished to create a smart 50-cover bistro with a 25-cover function room above. The food is Modern British with a slight French influence but relies heavily on fresh local produce; hence dishes like the Tempura of Chadwick's Bury black pudding with Lancashire cheese, apple and bacon and mustard vinaigrette. The main a la carte menu (7 starters, 7 mains, 7 desserts) changes every three months whilst the good-value Market Menu is updated every fortnight. They also offer a lunch time light bites menu in addition to daily specials from the a la carte. The wine list has a good choice of 50 bins with 12 by the glass plus a featured guest wine. It is open Wednesday to Friday 6pm-9.30pm, Thursday & Friday 12-2pm, Saturday 6pm-10pm and Sunday 12-8pm. Awards | Michelin Bib Gourmand | Good Food Guide 3
