Cheese and Onion Bread and Butter Pudding
Not a dessert but a vegetarian main course from Beluga.
Serves: 4 People
100g red onions (sliced)
2 garlic cloves
200g grated cheese
100ml double cream
6 slices bread
Seasoning (salt and pepper)
20g tomato compote (cherry tomatoes, sugar, vinegar)
20g mustard grain dressing (honey mustard)
Slice onions. Peel and crush garlic cloves. Wash and slice leeks. Beat eggs and double cream and add seasoning. Brush tray with melted butter. Lightly sweat onions, leeks and garlic until softened. Butter bread on both sides. Heat milk. Layer bread and onions, cheese, garlic and leeks into 3 layers. Add milk to eggs and cream, then whisk. Pour mixture over bread layers. Place in combi on steam roast approx 30mins at 80 degrees celcius. When cooked remove from oven and let set. Place portion on pudding in centre of round plate. Put tomato compote around pudding. Top pudding with crispy leeks. Drizzle dressing around edge of plate and serve.
