All over Middle East, Falafel is popular. Try this recipe from the Cedar Tree.
Serves: 2 People
Crushed chick peas, one and a half handfuls
1 chilli pepper, deseeded and chopped
Handful of parsley, chopped
Handful of coriander
1 tsp of seven spice
1 stick of celery, chopped
2 cloves of garlic, chopped
2 spring onions, chopped
4 pieces of fresh mint, chopped
Soak the chickpeas overnight in water, rinse, drain and then put in a blender with all the other ingredients except the sesame seed. Divide into six portions and for best results leave in water for a day. Remove and sprinkle with sesame seeds. Heat a pan of oil to a very high temperature, reduce temperature then fry the falafel submerged and for three minutes. Remove and leave to cool on paper for a few minutes to shed the oil then serve immediately with salad garnish.
