The chef who put Southport on the Michelin fine dining map, Marc Vérité, has struck out on his own with the opening of his eponymous Bistrot Vérité in Birkdale Village. After many successful years at the Warehouse Brasserie, and prior to that stints in France and Belgium, Marc has realised a lifelong ambition with this new venture and it's very much a family affair with wife Michaela running front-of-house and dad Claude helping out with patisserie. It's deliberately modelled on a rustic French bistro with simple and laid-back styling and a daily-changing menu based firmly upon fresh local produce. Starters might include Mussels Marniere or Baked camembert with caramelised apples and pistachio nuts; typical mains include classic dishes such as Chateaubriand for two with Bearnaise sauce and Grilled venison haunch steak rubbed with juniper berries and garlic. Hipping Hall near Kirkby Lonsdale is one of the northwest's select group of fine dining 'restaurants with rooms' . The building has been sensitively restored, matching contemporary style with classic features, and while most of the structure dates back to the 17th century, the restaurant itself, which has a wonderful walk-in fireplace, is Tudor. The multi-award-winning restaurant Ramsons has been a fixture in Ramsbottom since 1985. Sanmini's has brought top-notch south Indian cooking to Ramsbottom, gaining both an entry in the 2010 Good Food Guide and a nomination as Best Newcomer at the 2009 Manchester Food & Drink Festival. The restaurant enjoys a wonderful location in an old stone gatehouse and is named after Dr Mini Sankar, one half of the husband-and-wife team that own this family-run operation. The award of a Michelin Bib Gourmand in January 2007 was the latest accolade for The Waggon At Birtle on Bury and Rochdale Old Road. Chef proprietor David Watson came from a Michelin-starred background (ex-Pool Court in Leeds) and returned to his roots to open the Waggon with wife Lorraine in 2002. Housed in a former pub, the premises were completely refurbished to create a smart 50-cover bistro with a 25-cover function room above. The food is Modern British with a slight French influence but relies heavily on fresh local produce; hence dishes like the Tempura of Chadwick's Bury black pudding with Lancashire cheese, apple and bacon and mustard vinaigrette. The main a la carte menu (7 startes, 7 mains, 7 desserts) changes every three months whilst the good-value Market Menu is updated every fortnight. Rescued from Chinese restaurant obscurity in the 1990s, the Waddington Arms was refurbished and relaunched as a modern take on a traditional country inn. It's somewhere to meet, eat, drink and also to sleep as there are six individually decorated ensuite rooms. Waddington is still a real village and the pub sits at the heart of the community, attracting both locals and the many tourists that visit the Ribble Valley and the Forest of Bowland. The menus contain lots of local dishes with everything freshly prepared; choose from the main menu, a light bites menu and the specials boards. Renowned Clitheroe wine merchants Byrne's have put together the wine list with most bottles available by the glass. Hand-drawn cask ales and speciality coffees are also available.
