Hrishikesh Desai with his wealth of experience in Michelin-starred restaurants has taken over as Executive Head Chef at Gilpin Hotel & Lake House after staving off some stiff competition on Alex Polizzi’s Chefs on Trial TV programme. Hrishikesh is one of the few chefs to have won both the Roux Scholarship (2009) and the Craft Guild of Chef’s National Chef of the Year (2010) awards, and unique in that he won these in consecutive years. When should I add kasoori methi to a curry? I usually add it with onions in hot oil so that the oil could pick up its flavour but that seldom happens. If I add it at the end with garam masala, the dish happens to have a bitter after taste which is a put off. Please help me create a perfectly balanced curry having kasoori methi, also tell me which all whole spices could I use along with it in my cooking. - Saurabh Suri

"Ruined my Son's 18th birthday party. Extremely slow service. 1 hour + to have order taken and even longer for food to arrive. Had to chase staff for initial drinks order. The problem was that they were attempting to keep the restaurant running while serving a function which was seriously degrading the dining experience of quite a number of tables, not just ours. It was a case of pure profiteering. Packing everyone in and attempting to maximise profits at the expense of the customer experience. Of course they sent out the teenage table staff to take the stick and offer apologies, while buying you off with a round of free drinks but that's not what we wanted! What we wanted was a nice, relaxing, simple, memorable stress free dining experience. I won't be going again. I advise everyone to chose an alternative. The food was good though. Can't fault that but the delays ruined the whole night. The poor waiters and waitresses were left to field the complaints arising from the greedy management decisions. I left a tip despite the experience for that reason. I just hope the staff got it............... My advice: Diners....choose an authentic Italian experience. There are plenty better in the vicinity with better reviews. I really hate to leave bad feedback but people need know and there have to be consequences to the way they run this place otherwise if will continue. By all means give it a go and risk it. Food is good and you may fare better on the service but I'm never going back. Visited December 2016 "
